Sorghum
Sorghum, also called great millet, Indian millet, milo, durra, orshallu, cereal grain plant of the grass family (Poaceae) and its edible starchy seeds. The plant likely originated in Africa, where it is a major food crop, and has numerous varieties, including grain sorghums, used for food; grass sorghums, grown for hay and fodder; and broomcorn, used in making brooms and brushes. Sorghum is especially valued in hot and arid regions for its resistance to drought and heat.
With the growth of the gluten-free food industry, sorghum has taken the spotlight. When sorghum is used as an ingredient in baking, cooking, or other applications it is able to mimic gluten-containing items.
With a fine, tender texture and delicate mouth feel sorghum is sure to delight any gluten-free diet. Sorghum is also high in dietary fiber, giving an added nutritional benefit, as well.
The major health benefits of sorghum include its ability to prevent certain types of cancer, help control diabetes, offer a dietary option to people with celiac disease, improve digestive health, build strong bones, promote red blood cell development, and boost energy and fuel production.
